Authentic Persian recipes featuring organic, locally sourced ingredients, prepared from the heart of Chef Azar and brought to your home with Saffa.

 

An assortment of sweet and savory stews, each with different, mouthwatering flavors. Khoreste Bademjoon (bottom right), made with sautéed eggplant, chicken, and sour grapes and Khoresht Karafs (top left), made with celery, dill, and chicken, will satisfy any craving for a hearty meal with fresh vegetables and protein. Khoresht Fesenjoon (top right) is a walnut pomegranete stew with chicken, and most popular for its rich, sweetness. Enjoy any of these stews with Zereshk Polo and Tah Dig (center), Basmati rice with Saffron and a rice cake.

Koofteh Berenji is a Persian meatball made with beef, onion, rice, fresh herbs, and tomato, a traditional recipe from Kashan.

Kashke Bademjoon is a delicious appetizer made with sautéed eggplant and cream of whey, usually served with Lavash bread and fresh herbs.

Shami Nokhodchi is a traditional dish from the city of Kashan and unique to few regions of Iran. Made with beef and chickpea flour, these tasty patties are simmered in tomato sauce and can be enjoyed either hot or cold.

Asheh bulgur is a popular soup from Azerbaijan, a city in Northwest Iran, made with bulgur, tomato, sautéed onions, and beans. It’s tradition to always have a large bowl of asheh bulgur on the table for dinner, especially for large families.

Dolmeh barg (left) and dolmeh kalam (right) are healthy, flavorful appetizers, usually served with yogurt and shallots as well as fresh herbs. These dolmehs, grape leaf and cabbage wrapped beef, rice, and herbs, will melt in your mouth.

Khorest Gheimeh is one of the most popular koreshts in Persian culture. The tasty meat and split yellow pea stew, topped with crispy potato slivers, is traditionally shared at large gatherings and a staple meal distributed for charity.

Meet Chef Azar

Saffa is the inspiration for my cooking.

In Farsi, it means pure delight.

It’s at the heart of every recipe I learned from my great grandmother in Iran.

And every dish I’ve developed with new ingredients from my travels.

And every meal I’ve prepared and shared with family and friends over the past thirty years.
